A Dutch Gouda made from goat milk. The goats that supply the milk for this cheese eat a diet rich in clover, which gives the cheese a sweet flavour. The cheese is also rubbed in a caramel-based solution, enhancing the flavour even more. A medium saltiness balances well with the sweetness of the cheese.
