This blue cheese is placed in barrels and covered with a ruby sweet Rabasso wine & left for about 30 days. Once removed it is covered with blueberries, blackberries & currants & aged two more months. This cheese has an intense flavor with a hint of the wine. It is pleasantly sour, fruity and spicy offering a very complex flavour profile. If you love trying different and unique cheeses and are a fan of blue, this is a must try. It is a truly spectacular cheese!
