QAt la Pinoterie, the goats are fed with wheat and alfafa hay: no silage or GMO crops. The animals’ excellent diet is one of the decisive factors in producing good milk and quality cheese. The Selles-sur-Cher AOP Fermier Xavier David is hand-moulded with a ladle, then ripened for at least 10 days. It obtains a melting texture and a delicate dried fruit fragrance.
