Raclette cheese is a semi-hard cheese which is used for melting and grilling; it is not intended to be eaten raw. The mild varieties have a characteristic pungency, so it is definitely a dish for cheese-lovers. Made from pasteurised cow's milk, its semi-firm paste is surface-ripened. Raclette has a wasked rind and a strong taste with notes of hazelnut and mushroom.
Raclette is served sliced unless otherwise indicated and sold by the per person portion (approx 200 grams).
