Sainte-Maure de Touraine, made from unpasteurised goat's milk, is produced within certain regions of the departments of Cher, Indre and Loir-et-Cher, in France.

This is a young and fresh cheese with a gentle, comforting taste and grey edible rind. It is the second most popular goat’s cheese in France (the first is Crottin de Chavignol). It has a fluffy and soft texture, chalky in the middle and creamy towards the edges. Beautiful with dry fruits and nuts or any kind of fruit jam or chutney. 

The cylindrical form is covered in a blooming rind coated in vegetable ash. The flavours are caprine, grassy and lightly salty. The texture of the paste ranges from silky under the rind to fudgey in the centre. A straw runs through the cheese to aid in uniform ripening and maintaining the structure. Great pairing with Sauvignon Blanc.Â
