D’Affinois Le Campagnier is a soft cow's milk cheese made using ultra-filtration in cheese making. This technique removes some of the water in the milk to create a lusciously creamy texture. The rind is washed with salt water and then set aside for three weeks to allow a white mould to develop on the rind.Â
The amber-coloured rind makes a stark contrast to the ivory interior of this gooey cheese! Le Campagnier is a mild French washed rind cheese with a slightly more pungent aroma than other double cream fromages and is à real crowd please.
Pair with Chardonnay or a sparkling wine.
