Raclette is a semi-firm washed rind cheese with origins in Switzerland. Traditionally it is served melted or grilled (the word raclette means to scrape); it is not intended to be eaten raw. The mild varieties have a characteristic pungency, so it is definitely a dish for cheese-lovers. Made from pasteurized cow's milk, its semi-firm paste is surface-ripened.  Raclette has a washed rind and a strong taste with notes of hazelnut and mushroom.
Raclette is prepared sliced unless otherwise indicated and sold in individual per-person portions (approx 200 grams). This raclette originates in Quebec.
