Crafted using a batch of honeycomb "wax-washed" Rye Whisky, local honey and Aromatic Bitters, this is Dillon’s re-imagined take on the classic.
If you're wondering what wax-washing is, here's the 411. In a temperature controlled tank local honeycomb was added to Dillon’s rye whisky and then they turned up the heat to 60C for 90 minutes. The resulting liquid is super rich in mouthfeel and texture with a little added honey flavour.
To really amp up and double down on that honeyed flavour, they added more fresh honey to the mix, some of Dillon’s Aromatic Bitters for warm spice character and voila - the Honeycomb Old Fashioned.
