Single-varietal Pinot Noir grown in soils composed of marine sediments, limestone, marl, and clay. The grapes are harvested by hand.
Alcoholic fermentation takes place in stainless steel vats over 12 days. Gentle pneumatic pressing is used to preserve the aromatic integrity of the grapes. The wine is then aged for 6 months in steel tanks, with a light filtration before bottling to ensure clarity and stability without compromising its sensory profile. Maturation in wooden barrels follows, lasting from 1 to 4 years depending on the vintage.
