This is a lower-acidity vinegar. It is smooth with the natural bite from the vinegar but it is pleasant and not over powering. A bittersweet vinegar produced from intensely aromatic Merlot wine, with hints of vanilla and liquorice. Very sweet, elegant palate, enriched with toast notes acquired during the 12 months of aging in French oak casks that recall blackberries, raspberries and violets. Great vinegar to elaborate dishes with white meat, poultry, small game, smoked fish and nuts. Absolutely one of the best vinegars made in the world using the Schutzenbach method invented in 1823.
