San Marzano no. 2 tomatoes are an endangered variety from Campania, Italy, grown on the volcanic soil of Mount Vesuvius, and are extra delicate - meaning they must be hand-harvested. These tomatoes have already been gently cooked in a water bath, peeled, and de-seeded for an intense, sunny tomato aroma and solid meaty texture that is ideal for cooking.
