Bomba is an ancient varietal of short round grain rice with a pearled color, and is treasured throughout Spain. When cooked, it increases its size by 100%, absorbing more than 4.5x the broth used, making it ideal for paella dishes. This great capacity to absorb flavours while still remaining firm is its main feature, making it ideal for paella. It will not overcook as easily as other Valencian rice types, which is why this is the rice of choice for cooking paella. It is also ideal for risotto.
