Le Brebiou is a bloomy-rinded sheep’s milk cheese produced by the French cheese company Bongrain and refined in the Pyrenees Atlantiques region of France. It has a soft texture with a firm, smooth paste and velvety, bloomy rind. The creaminess of sheep's milk and the rich, green pastures give the Brebiou a smell of fungus and a sweet, milky taste that becomes tarter toward its centre.  It gets very ripe due to its four months of wet aging. Quite mild with a nice finish.Â
Pair it with a light red, a fruity and dry white, or a rosé.
