Buffalo mozzarella is a fresh and soft cheese, higher in calcium, protein and lower in cholesterol than cow’s milk. It is the perfect fresh ingredient for starter dishes, with tomatoes and salads or pasta and with side dishes, but it is also excellent cooked, when it becomes a slightly and deliciously stringy.
