This 100% sheep's cheese Tomme immediately stands out, to the eye, for its slightly irregular paste, the result of the special pressing required for a cheese of this type. Reminiscent of mountain tommes from regions such as the Pyrenees, it is quite intense, aromatically, with a rather mushroomy rind, with pronounced aromas. The texture, on the palate, is crystalline, and the floral notes reminiscent of goldenrod, even dandelion, are coupled on one side with a resinous strand that is reminiscent of a woody note where the cedars have clinging well.
Tomme de Brebis de Charlevoix has a beige crust and body. The latter is supple and smooth and reveals sweet and lactic aromas. Its taste is sweet, lactic, rich and finely salted.
Made with milk from the ewe herd at the Maison d'affinage, it has been around since 2009.
