Zacharie Cloutier is an unpasteurized sheep-milk cheese aged and ripened for 4-6 months. Its firm paste is semi-cooked and exudes sweet aromas of butter and caramel with moderately salty umami, brothy, and brown-butter flavours. It is delicate and fresh.
Fromagerie Nouvelle France was founded in 2010, and lead cheesemaker Marie-Chantal Houde has spent the last 15 years transforming and refining her cheeses. Her goal is to create modern cheese creations with a deep respect for tradition.
Why the name "Zacharie Cloutier"? A nod to Quebecois history, Zacharie, is often referred to as the “father of all French Canadians”. A French carpenter who left La Rochelle, France in 1634 and braved the Atlantic to settle in Château-Richer with his family. Zacharie Cloutier is the ancestor of the Cloutiers of America and has a direct connection to the Houde family.
